- 4 large eggs
- 1/4 cup 100% pumpkin puree
- 1/2 cup full fat coconut milk
- 3 tablespoons coconut flour
- 3 tablespoons cacao powder
- 2 scoops Perfect Keto Microgreens
- 1 tablespoon pumpkin spice
- 1/4 teaspoon salt
- 20 drops stevia
- In a large bowl whisk together the eggs, pumpkin and coconut milk until well combined.
- Add in all of the dry ingredient and whisk until a thick batter forms.
- Heat your waffle iron according to manufacturer instructions.
- Add ⅓ cup of batter to the iron at a time to make large waffles. Cook 4-6 minutes. Then carefully lift with a spatula to remove from the iron. Repeat until all of the batter is made. It will make about 4 large waffles.
